Halfdan Kluften is a Chef, and has been a part of the opening team of Restaurant FREA in Mitte, Berlin. A big part of the food is based on fermentation, such as preserved vegetables like kraut and kimchi, sourdough bread. But also doing chocolate from scratch, making wine and turning it in to vinegar and so on.
